Pork Afritada Recipe

My mom recently cooked this easy recipe and good food dish few days ago, Pork Afritada or Stewed Pork In Tomato Sauce. This good food is very similar to Menudo, Mechado or Caldereta since they are all tomato based. Although, you could differentiate this particular filipino recipe from the others for its cut of pork, other ingredients and of course, by its taste since this easy recipe has its own unique taste. Serves 4 Prep Time 15 minutes Cooking Time 40 minutes

Ingredients

1/2 kilo pork, cut into serving pieces (almost like adobo cut)
1/2 cup tomato sauce
3 medium potatoes, peeled and quartered
2 medium carrots, peeled and sliced about an inch thick
2 medium red bell pepper, sliced
4 cloves garlic, minced
1 onion, sliced
1 tbsp patis (fish sauce)
1 cup water
2 tbsp cornstarch
1 tbsp vegetable oil
1/2 tsp salt
1/2 tsp pepper


Instructions

In a bowl, season pork with salt and pepper. Let stand 10 minutes.

Heat oil in a saucepan over medium heat. Stir-fry the pork pieces until lightly brown.

And then add the garlic and saute until fragrant. Add onions until soft and translucent.

And then add carrots and season with patis and stir-fry for a few minutes.

Add the potatoes and stir-fry for another minute or two.

Pour in water and tomato sauce and bring to a boil.

Lower the heat and simmer covered for about 15 to 20 minutes or until pork is cooked and the carrots and potatoes are tender.

Add bell peppers and stir to blend.

Add cornstarch to thicken the sauce. Stir to blend and let simmer for few minutes.

Serve hot in a serving dish.
