I have unaccountably been craving cheese crackers for some time now, and these light flaky crackers are just the little crispy spicy delights that can satisfying any such desire. Delicious on their own, they're also a delightful addition to hors d'Ĺ“uvre platters.
Spicy Parmesan Crackers |
Recipe by Lisa Turner Published on June 11, 2008 These crispy and flaky Parmesan cheese crackers are dusted with spices are easy to make, and are a great addition to snack platters Preparation: 10 minutes Cooking time: 12 minutes Print this recipe Ingredients: - 2/3 cup unbleached white flour
- 3 tablespoons finely grated Parmesan Cheese
- pinch of sea salt
- pinch of curry powder
- pinch of cayenne
- 1/4 cup (1/2 stick) cold butter, cut into pieces
- 1 to 2 tablespoons cold milk or buttermilk
- ground cumin and paprika for sprinkling
Instructions: Preheat an oven to 375° and line a baking sheet with parchment paper. In a mixing bowl, combine the flour, cheese, salt, curry powder and cayenne. Cut the butter into the flour mixture using a pastry cutter or a fork. The butter should be reduced to small pieces. Add the milk gradually until a dough is formed. Knead briefly, shape into a ball, and wrap with plastic wrap. Chill in the refrigerator for 30 minutes. On a lightly floured board, roll the dough out until it is about 1/8-inch thick. Cut into small squares and transfer to the baking sheet. Sprinkle with some cumin and paprika. Bake for 12 minutes or until the crackers are nicely browned. Cool slightly on a wire rack before serving. Makes about 30 crackers |
